Recipe: Roasted Sweet Potato and Black Bean Tacos
Ingredients:
- 2 large sweet potatoes, peeled and cubed
- 1 can black beans, drained and rinsed
- 1/2 onion, diced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- Corn tortillas
- 1 avocado, diced
- Fresh cilantro, chopped
- Lime wedges
Instructions:
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Toss the cubed sweet potatoes with 1 tbsp of olive oil and spread on the baking sheet. Roast for 20-25 minutes or until tender and slightly browned.
- In a skillet, sauté the diced onion until translucent. Add the black beans, smoked paprika, cumin, garlic powder, and salt. Cook for 5 minutes, stirring occasionally.
- Assemble the tacos by placing the sweet potatoes and black bean mixture on a warm corn tortilla. Top with diced avocado, cilantro, and a squeeze of lime juice.
